Cornish Pastry

cornish pastry close up

Not hot pockets, but close.   I made Cornish Pastry  today and it turned out great.   My meat was homemade beef sausage from Ralph Moody’s mom’s  recipe from his  Little Britches series (post before this).   In his last book I read– Horse of a Different Color, Ralph( 21 or 22 yrs old) gets the contract for supplying the meat for the railroad workers and he makes a sausage from his Mom’s recipe with sage, ginger and cayenne peppers.  He used pork and beef in his sausage; I used  beef hamburger only, but that sage, ginger and cayenne pepper combination is really good (mostly sage, next a percentage of ginger and some cayenne.).

Do you ever make something in the kitchen and say to yourself- why don’t I make this more often?  That is what I said to myself  today.
